OKLAHOMA CITY — Odyssey de Culinaire returns ready to set sail at 6 p.m. July 15 at the Skirvin Hilton Hotel in Oklahoma City and July 22 at the River Spirit Casino Hotel in Tulsa.
The theme for 2021 is “Travel Destinations,” presenting attendees a five-course culinary experience, each course inspired by different destinations from around the globe, accompanied by a wine selection provided by Republic National Distributing Company.
For the opening event at the Skirvin, Oklahoma City chefs – Kevin Lee, The Social Order Dining Collective; Jeff Chanchaleune, Goro Ramen; Chris Barton, Skirvin Hilton Hotel; Ryan Westbrook, Traditions Spirits and Chickasaw Nation Casinos; and Joshua Valentine, Milo Restaurant at The Ellison – will create amazing “Travel Destinations” themed dishes for attendees.
One week later, the Tulsa chefs – Ben Alexander, The Tavern; Alex Pierce, Southern Hills Golf & Country Club; Miranda Kaiser, Laffa Medi-Eastern Restaurant & Bar; Joel Bein, The Meat & Cheese Show; and Kevin Nashan, Peacemakers and La Tertulia – will prepare an equally fabulous dining experience for attendees at the River Spirit Casino Hotel.
Odyssey de Culinaire is an Oklahoma Hospitality Foundation event, which provides an educational culinary experience and support for students and teachers. Odyssey chefs are paired in their course preparation with high school students currently active in Oklahoma ProStart® schools. Funds raised from the event benefit students, teachers and schools involved in Oklahoma ProStart culinary educational programs. This support includes teacher training and development, materials and resources for student recruitment, assistance with job placement for internships, graduate employment and industry-driven events for hospitality students.
This year our student participants come from seven premiere programs across Oklahoma. The students – Sean Fetters, Edmond Memorial; Kenneth Childs, Metro Technology Center OKC; Brendan Pham, Tulsa Technology Center Owasso; Richard Lewallen, Tulsa Technology Center Owasso; Mario Garcia, Nathan Hale High School; Jazlyn Hancock, Meridian Technology Center; Cole Matheny, Tulsa Technology Center; Joel Keel, Indian Capital Technology Center; Sanh Quan, Tulsa Technology Center; Joaquinn Juarez, Tulsa Technology Center; Alysis Gonzalez, Nathan Hale High School – will collaborate with a mentor chef to gain culinary experience preparing a dinner course.
This annual event is presented by the Oklahoma Restaurant Association. A champagne reception will begin both evenings at 6 p.m. Dinner will follow at 7 p.m. The event is open to the public and seats are $125 per event, and there is a Full Table Discount for those who purchase seven seats and receive a complimentary eighth seat.

ProStart is a school-to-career program designed to introduce high school juniors and seniors to careers in the foodservice industry. Through classroom activities, internships, and exams, students work with local chefs, gain valuable experiences and earn certification.
